To be honest with you, I don't know the exact reason for that. I've seen trainers use either a wooden paddle (from the sport Paddle Tennis) or a regular Tennis racket. The trainers that I've seen use the wooden paddles say it is easier to control the ball, aim the ball and can better control the balls speed. I've also seen trainers just throw the tennis balls and not use a paddle/racket. The point of the exercise is to help with the GK's reaction time, weight shifting and directional changes with having the tennis balls come at you continuously at a rapid pace.
